Order via WhatsAppDescription Gallina de Piel Mimetic Calatayud Garnacha by David Seijas, Aragon, Spain Winemaker / Producer: The wines of Gallina de Piel are made by David Seijas, once the Head Sommelier of 3 Michelin star Restaurant El Bulli. David wants to champion Spain’s northern vineyard areas of Catalonia, Aragon & Galicia and works with local growers to select the best vineyards of indigenous varieties to create fresh & food friendly wines. Vineyard & Winemaking: The fruit for Mimetic is sourced from arid, low yielding clay soils of Aragon, with vineyards of 50 to 80 years of age. Once picked, the grapes undergo a cold maceration for 3 days to extract colour before fermentation in concrete tanks and contact on fine lees for 6 months to add mouthfeel. Tasting Notes: Mimetic is fresh, juicy and vibrant with oodles of blackberry and black cherry fruit on the nose and palate. Food Pairing: Perfect with Jamón & Pecorino. This Garnacha red wine from Aragon is also a brilliant match for slow-roasted lamb, grilled chorizo and hearty Spanish tapas.
