Description Mâcon Villages 2023, Domaine Fichet, Mâconnais, Burgundy, France Winemaker / Producer: Pierre-Yves & Olivier Fichet have established an outstanding reputation for their 35 hectares in the southern Burgundian district of the Mâconnais. A modern winery, great attention to detail in the vineyard, and excellent soils of high white limestone, chalk and clay all contribute to their quality. The producer also works organically. Vineyard & Winemaking: The microclimate of the domaine brings extra humidity and morning fog, adding freshness and concentration to the fruit. Once the grapes are harvested, sorted and gently pressed, the wine is fermented in stainless steel at low temperature and spends 6 months on fine lees before bottling, building texture and roundness whilst preserving the natural freshness of the fruit. Tasting Notes: The nose is ripe citrus fruit and wildflowers, with a following white Burgundy palate of surprising richness for an unoaked Chardonnay — generous Burgundian white flower fruit and beautifully balanced lemon-drop acidity. Food Pairing: Perfect with roast pork or monkfish. This Mâcon Villages Chardonnay also pairs beautifully with creamy chicken dishes, fresh scallops and soft ripened cheeses.
