Their approach is rooted in sustainability rather than trend—choosing hardy grapes allows them to farm with fewer treatments and maintain healthy soils. Carcassonne sits where Atlantic and Mediterranean influences meet. The region is windy, which naturally limits disease pressure, and the vineyards lie on a mix of limestone, clay, and old alluvial soils. Warm days build flavour, while elevation and airflow preserve acidity. It’s a landscape that suits their low‑input approach and supports bright, fresh styles. Petit Sauvage follows that logic. It’s made from Souvignier Gris, another resistant variety that thrives in their conditions. The wine is dry, crisp, and lightly aromatic, showing citrus, pear, and subtle herbal notes with a clean, refreshing finish. The texture stays light, the fruit is clear, and the overall style reflects both the grape’s resilience and the estate’s commitment to low‑intervention farming. The glass is the lightest available and the cork is locally grown, they don’t use aluminium wrap on the neck of the bottle and they don’t add sulphites to the wine.
